This week's recipe is a new favourite at our house. In my quest to find a cookie recipe that could be dairy and egg free as well as gluten free I found one which uses oil instead of butter or margarine. Naturally I was skeptical that a good cookie could be made with oil but I was pleasantly surprised at how this one turned out. Of course my taste testers gave their feedback and after a few more batches with alterations here and there a new family favourite was baked! Many dozens of this cookie have now been baked for family and friends.
Having this recipe turn out well egg free was a bonus as I am always getting requests for egg free recipes. This one satisfies gluten,dairy and egg free requests and can be nut free as well.
